Will it be exhausting to do all 3 maths (Further maths, Math methods, Spesh Math) in one year? What will the workload be like?

Yes, it will be extremely hard.
For context, my school (select entry high school) doesn't even let students do three in one year because it would be too much work + it limits your scope a lot.

Since I'm only doing Methods I can't answer, but isn't it true that you can only have two maths' count in your top four? So therefore, is there actually a point in doing all three? I mean, I wouldn't expect them to be all prereqs for something. Although I don't know.

Depends really. If you don't like maths it is likely to be quite exhausting but if you enjoy it it would be easier to get through imo.
It may be difficult since given the same area of study if you don't want to study maths for whatever reason on a particular day you would have less other options to turn to.

In my opinion, yes. I would say that I am someone who really enjoys maths and 2 maths subjects in one year (methods 3/4 and further 3/4 in year 11) is a LOT. Sometimes I just get so sick of numbers that I go and do another subject. Not to forget, only 2 can count to your top 4 meaning if you theoretically get a 50 in all, one of them would only contribute 5 points to your aggregate.
In my opinion, I would definitely undertake methods, as it is a good foundation and fulfils many pre-reqs. Between further and spesh, it depends on what "type" of maths you are interested in. Spesh is a more challenging, complex extension of methods while further is more practical. You could always do spesh 1/2 and drop it for further 3/4, but not as easily the other way round.

If you love Maths and would enjoy spending more than half of your study time in VCE doing Mathematics - go for it!
There is a significant overlap between Methods and Spec, so if you are a strong Maths student and only want to do 2 Maths, the Methods-Spec combination would probably be the best choice.
But you may also enjoy doing Further Mathematics - it's a great course with lots of applications to real-world problems. Statistics topics like Linear Regression are so widely used in University Science and Commerce courses that you are likely to need them later on anyway, and the Finance concepts are useful for anyone - who doesn't like money? ;D

What year ur in? I've got friends who undertook Further 3/4 in Year 10, Methods 3/4 in Year 11, and currently doing Specialist Maths 3/4 this year. This is a good way to manage and alleviate the workload from those heavy-contented subjects

I would think it would be quite difficult, but if you are motivated and passionate about maths, it's definitely doable. In terms of workload, I remember my teacher recommending about 3hr/day for method and spesh combined if you are looking for above high 30s study score.

If you are very passionate about maths or enjoy it, it is 100% doable. If you are a year 10 deciding on your year 11 subjects. Do 3 and 4 Further in year 11 and just try to get a grip of the duality of methods and spesh during that year.
