Personally, I don't think it's worth copying ALL of your notes, especially concepts that you're confident in. I think for both subjects I ended up photocopying about 3-4 pages from my yr 11 notes for my yr 12 notes but that was about it. I found that for methods all the basics covered in yr 11 should mostly be stuff that you remember for the exam (and that you don't need a bound reference for). Plus, they often revisit these basics quickly in class to refresh everyone's memory during Units 3/4 so you can put necessary notes in your bound reference then rather than copying chunks of information now that may prove redundant later on.
At the end of the day, you probably won't end up using your bound reference in the exam that much, it's more useful for helping to revise concepts throughout the year (and if you do need to use your year 11 notes for this, that's perfectly fine). If you do need to use your bound reference, obviously a bigger bound reference with unnecessary stuff will just make it harder to find the specific help you need.
