Has anyone been able to set up their Monash account? I have registered but am yet to receive an email from them…

You should be able to set up through the Monash link where you checked your offer (https://www.monash.edu/get-started). Once you enter your VTAC details, there should be an option to begin your enrolment (but maybe this is locked until 2pm when VTAC accounts are actually supposed to open).
