As requested by AngelWings:Chocolate and Salted Caramel Cake:
Thank you, Insanipi! I might just try this next time I get a free day, but I don't know how well that'll go seeing that I'm not the best chef. Hopefully it'll be as good as you make it sound.  :D

From an organic/fairtrade shop (again, mum bought the stuff), but tbh I want to retry the recipe with Lindt's Salted Caramel choc :)

I voted passable because I can follow a recipe or make something basic without burning the place down or giving anyone food poisoning

but that's as exciting as it gets

I'm not a 'natural' cook at all -- can't think of something on the spot etc. Honestly I kinda hate cooking

Ironically I received the food tech award at school for every semester that I did it... seriously. I think I'd always get full marks on the assessments somehow but I remember not wanting the award lol. Being a sciency person at school I found it embarrassing hahaha

but I actually want to make this

I thought AN might need a place to share recipes!

I'd be happy to try some of them. I don't actually measure when I wing my cooking, but I'll be sure to next time so I can post some!

Welcome to Flavourtown ;)

If anyone is brave enough to try cooking ala Calebark (that is, without quantities), here's how I made cottage pie:

Ingredients:
-Beef mince
-Peas
-Carrot
-Sweet potato
-Beef stock
-Soy sauce
-Flour
-Breadcrumbs
-Salt, pepper, rosemary

Method:
-Put block of mince in a pan. Brown it on all sides. This should only take a few minutes.

-Boil all your veggies. You'll need lots of sweet potato. Not as much peas and carrots.

-In a saucepan, put beef stock and soy sauce. 90% stock, 10% soy sauce. Water to dilute a bit so it's not too salty.

-Once your mince is browned, break it apart so it's not a big lump, and put it in the saucepan. Cook on a low temperature. This will take a while. It took me over half an hour of waiting, but again, I don't know quantities, so frequently check. You'll add your peas and carrots here once done. Spice to taste. By the time you're done, you won't have heaps of sauce left

-Mash the sweet potato. Add pepper.

-Get a deep tray (I hope that's what they're called). Pour in the veggies+meat, not the sauce. I just do this by pouring at an appropriate angle. Mix in the flour to the sauce to thicken it up. Add the sauce to tray. Even it out. Add a thick layer of sweet potato. Even it out. Add a thin layer of breadcrumbs. Sprinkle some rosemary in the breadcrumbs.

-Cook in oven at 180°C for about 20 minutes, until the top of the sweet potato/breadcrumbs is a bit crispy.

-Serve

Hope that's easy enough -- it sounds like more effort than it is. Excuse the sloppy writing :D Now, is it still a cottage pie if I add breadcrumbs on top?

insanipi's fried rice

I made this for lunch today, and the amount of ingredients I used was enough for 6 people and some leftovers, reduce the number of ingredients where necessary. :)

Ingredients
What I used, you can add/subtract stuff from this :)
2 (standard) mugs of long grain rice
4 eggs
1 packet of Coles Frozen Stir-Fry Vegetables
1 large onion
4 eggs
400g of pre-diced bacon
3 tablespoons soy sauce
2 tablespoons of Chinese cooking wine (readily available in the Asian section of Coles/Woolworths :) )
1 teaspoon of chicken stock
Salt and pepper
Oil
Water

Method
Preparation
- chop onion up
- prepare chicken stock- 1 teaspoon of powdered chicken stock to 1/2 cup of water
- in a bowl, whisk  4 eggs and salt and pepper to taste with a fork

1. Boil the rice:
- for every cup of rice, add 4 cups of water
- cook uncovered for 12-14 minutes
- drain and rinse with cool water
- allow rice to cool and set aside until step 4

2. Fry the egg/make an omelette
- in a pan, heat some oil and then fry the egg mixture.
- remove from pan and chop up.
Note: you may need to clean the pan up after this step. :)

3. Fry the bacon
- in a pan, heat the oil and chuck in the bacon.
- allow to cook and once done, leave it on heat.

4. Putting it all together
- in the pan that has the bacon, add the rice, vegetable mix, egg and onion and stir
- whilst stirring, slowly add in the chicken stock, soy sauce and cooking wine
- cook until the frozen vegetable mix is cooked, and the other ingredients are hot

5. Serve

My end product looked like this:

(My younger siblings absolutely enjoyed this haha)

So I felt like making this today, and I thought to share it with y'all. :)

Make your own sushi

Ingredients I used and special equipment:
Nori sheets
500g sushi rice (if you can't get this, go for short grain)
3-4 tablespoons of rice vinegar/sushi seasoning
A few cans of tuna
Sweet spiced gherkins
Mayo
Cucumber
Carrots
Capsicum
Soy sauce
Bamboo rolling mat, covered in gladwrap

Method
- Boil and cool down rice
- When the rice is cool, add the sushi seasoning
- Chop carrots, gherkins, cucumbers and gherkins into strips
- Place a nori sheet onto the gladwrapped bamboo
- Add rice in the middle of the sheet, pressing it down into the sheet
- Add the fillings however you wish
(Tip- leave the top bare so you can roll it up :) )
- Once done, place a strip of water on the bare part of the sheet
- Pick up the bamboo mat from the edge nearest to you and start tightly rolling to make a sushi roll, putting some pressure at the end to form the roll
(Tip: It may not be perfect- I didn't get it right the first few times either haha)
- Once done, transfer to a plate, slice and serve with soy sauce if you wish.
