Are we allowed to sit the UMAT in Year 11 as well as Year 12, in order to put the best result forward for uni?

(Unrelated but does Monash University heavily weigh UMAT results or just ATAR and prerequisites?)

Firstly, the UMAT has been replaced by the UCAT.

You cannot sit the UCAT in year 11, only in year 12.

With the UMAT, Monash weighted the interview, UMAT and ATAR 1/3 each. It is likely to stay the same with the UCAT but this is not confirmed.

You can find more information about the UCAT here - https://www.ucatofficial.com/faqs/
