What are the irrelevant things in VCAA exams from 2000-2016?

From memory it's things like details about plants, respiration & photosynthesis and mitosis/meiosis/punnett squares. I've probably missed some things though. You should aim to be familiar enough with the study design by the time you get to doing past exams that you can work out whether questions are relevant or not.
